This dish was delicious and I think I can safely say that it has made it onto my list of dishes I will cook over and over again. It is meant to be a soup but I found it a bit too filling to have a whole bowl full so I paired it with some rice and ate it like a curry in the end. The balance of earthy kidney beans, sweet tangy tomatoes, and creamy coconut milk was just perfection and it was so simple!
