Honduran baleadas




This dish is Honduras’ version of a quesadilla or even a taco I suppose – it’s delightfully simple and very filling, at it’s core it’s a tortilla filled with refried beans and farmers cheese which is something between a quark, halloumi and mozzarella – I used a mix of cheese for mine and I served with a side salad (which if I’m totally honest ended up inside the second baleada making it more of a taco by the end of it!) I used this recipe here but opted for shop bought tortillas as this ended up being a quick mid-week lunch.


Makes around 6 depending on how much you fill them!


Ingredients:

  • 6 Flour tortillas – either homemade or shop bought.

  • 1 tin of refried beans (warmed slightly)

  • 1 avocado sliced

  • ½ cup of cheese

  • ¼ cup of fresh cream


Method:

Heat a large skillet over medium heat and place your tortilla onto it. Add the refried beans, cheese, avocado and cream and then fold over, let it get slightly toasty on both sides and then serve!
