Chicken Adobo - Philipines

This dish is not part of my challenge as it is quite an old recipe but delicious nonetheless! The recipe is a sticky chicken thigh dish glazed in a delicious sticky sauce. The original recipe I used came from here and the below photo is from an adaptation I made for cooking for 1!




Serves 4

Ingredients

  • 1 tbsp oil

  • boneless chicken thighs 4, skins removed

  • 2 cloves of garlic, bruised

  • 3 tbsps soy sauce 2 tbsp

  • 3 tbsps sherry vinegar or rice vinegar 3 tbsp

  • 8 black peppercorns 8

  • 1 bay leaf 1

  • 1 tbsp of sugar

  • steamed basmati rice to serve

  • cooked greens to serve

To Serve

  • Rice

  • Vegetables

  • Coriander and sesame seeds (optional)

1. Heat a little oil in a frying pan, and fry the chicken until golden.

2. Add the peppercorns, bay leaf, garlic, soy sauce and vinegar to the pan along with 100ml of water.

3. Cover and let it simmer gently for about 20 minutes. Turn the chicken occasionally to make sure it’s all coated. The sauce will reduce and become slightly sticky.

4. Serve with rice and steamed vegetables.
