Burkina Faso is a West African country that is completely landlocked. For this weeks recipe I went for Banfora a small pan-fried cake that reminded me of Welsh or Eccles cakes but made with pineapple. Like most other African countries Burkina Faso's staple ingredients include maize, yams, beans and rice and they make lots of drinks out of fermented grains and palm! It sounded very interesting but I must confess that I was already decided on a dessert! The original recipe came from here, one of the other recipes I found suggested that I roll them in sugar and cinnamon after - but I found them very tasty just as they were and will be trying again with more fruit!

Method
Sift the flour and salt together in a large bowl. Cut the butter into cubes and rub with your fingers until it resembles fine breadcrumbs. (You can also do this in a food processor)
Add the sugar and pineapple and salt, and mix to combine. Then add the egg and mix until ir comes together. Add the milk gradually as you may not need it all. You should be able to roll the dough out.
Flour your work surface and roll the dough out. Cut into rounds.
Lightly grease a frying pan with some butter and fry the cakes for a few minutes on each side, or until golden.
Cool on a wire rack.
